Miriam's Carrot Cake

1 1/2 Cup Salad Oil
4 Eggs
1 Teaspoon Salt
1 Teaspoon Baking Soda
3 Cups Grated Carrots
2 Cups Sugar
2 Cups Sifted Flour
2 Teaspoons Baking Powder
1/2 Cup or less Raisins
1 Cup Chopped Walnuts

Blend oil, sugar and beat in eggs one at a time, beat after each egg.
Sift flour and dry ingredients, then add to egg mixture
Add carrots, nuts and raisins, raisins are opional
Pour into a lightly greased pan, 9 x 13
Bake at 350 degrees for 45 minutes or till done

-Frosting-
1 - 8oz. pkg. Cream Cheese
1/2 Stick Butter
2 Teaspoon Vanilla
1 lb. pkg. Powdered Sugar
Mix well to look like Whipped Cream

Wait for cake to cool before adding frosting
Cut you a big piece
and ENJOY!!!
